Homemade Bing

Yield
~2 dozen

Ingredients

  • 2 c flour
  • 2/4 c boiling water
  • oil

Instructions

  1. 1

Mix flour and boiling water with chopsticks then knead on a floured surface until soft like a baby's bottom (NEED NEW DESCRIPTION).

  2. 2

Let dough rest covered in the bowl for 15 minutes.

  3. 3

Divide dough into fourths then use your hands to roll into a tube. Cut each of the four tubes into six pieces. (24 total pieces)

  4. 4

Roll each piece into a ball and press into large coin-shaped pieces. Dip both sides into a pile of flour.

  5. 5

Brush one side of each coin with oil. Put two pieces together (oil sides facing in) and roll out into an 8" circle. (You'll have 12 circles.)

  6. 6

To cook, put the circle into a small dry frying pan. Cook on low or medium/low. Watch the bing closely and once it starts to bubble use chopsticks / your hand to flip it. Cook other side for just a moment!

  7. 7

Remove from heat. Once it cools slightly, separate the two pieces and set aside.

  8. 8

When ready to serve, steam for 10 minutes.

Notes

You can freeze or refrigerate bings then steam when you are ready to serve.
