Shrimp Patties

- 1 lb large shrimp
- 2 scallions (white & light green parts only)
- 1.5 tsp salt
- 1 egg
- 1-2 Tbl cornstarch
- Oil
- Sherry

Peel and devein shrimp. Rinse and pat dry with a paper towel.

Cut scallions into fourths lengthwise then finely chop.

Squash shrimp with flat part of the knife blade then chop. Shrimp should be finely chopped but still have some texture!

Combine shrimp, scallions, and salt.

Beat egg and add to shrimp mixture. Mix to combine.

Mix in 1 Tbl cornstarch. The mixture should come together so it can be formed into patties easily. If the mixture is too loose, add a second Tbl of cornstarch. You will likely need both tablespoons. Combine until a dough-like consistency forms. (Grammy says stir in one direction only.)

To cook, heat oil in pan. Form patties (2-3 Tbl each) using a spoon and your hands. You can dip the spoon into water between each patty so the shrimp mixture doesn't stick. Plop each patty directly into the pan.

Pan fry on medium-high / medium heat until very lightly browned. Flip and cook other side.

When patties are almost finished cooking, add a splash (1-2 Tbl?) of cooking sherry.

Serve over veggies: snap peas; cauliflower and dried mushrooms w/ salt & chicken broth.
